Really sorry I haven’t been posting for such a long while – internship has been taking up a lot of my time. I can’t believe we’re almost at the end of December, which also means we’re near the end of 2018! Time flies so fast this year, and it’s going to be time to make new year’s resolutions soon. I think this might be my last blog post for 2018, and hopefully once my internship ends I’ll be able to post more often!
Today, I’ll be sharing about my annual Christmas Potluck with my secondary friends – it has became a tradition of ours since about 2 years ago? We are supposed to bring a dish each, but since I had extra time I decided to cook 2 (easy) dishes.
Our Christmas menu included:
- Homemade mushroom soup
- Homemade Chicken pie
- Roast Chicken (from Cold Storage – it’s only SGD $4.99!)
- Korean-style marinated chicken wings
- Pizza (from Dominos)
- Salad (we needed some greens)
I made the chicken pie and chicken wings, and I’m so happy to say that both are a BIG success. Previously, I attempted to make the chicken pie, but it didn’t turn out too well as the bottom of the pastry was not as crispy as I preferred it to be. This time I let the puff pastry bake in the oven for around 5 minutes before adding the filling. After which I let it bake for around 20-25 minutes. For the recipe, I followed Tasty Japan’s recipe (link here). It’s a very straightforward recipe, and you don’t need that many ingredients. Seriously, if I had more time, I would try out so many of their recipes. But for now, they’ll have to wait.
For the Korean-style marinated chicken wings, I followed House of Nash Eats’s recipe (link here). It was such a simple recipe – all I did was marinate the chicken wings overnight, and popped it in the oven to bake for 1 hour. It was spicy, sweet, and garlicky! My friends and family loved it 🙂 For those looking for finger food that is easy to make, I would recommend giving this recipe a try. I’m definitely going to make this again when I have a party next time.
